Raised planting beds

What would you recommend for a food-safe finish for raised garden beds at a school? Our beds were made of untreated cedar and have been lined them with landscaping fabric to protect the wood. We would like to finish them to retain their beautiful color, but want to avoid anything harmful that could get into the soil. With nut allergies, walnut oil is probably not a good option for us.

Mineral oil is food safe, but personally I would live with the changes in the color of cedar. You are wasting money because you will have to reapply often as the wood dries out.
