I was given a beautiful hand made salt box by a friend, but he put a varnish or shellac finish on it that smells so strong, is it safe to put salt into to use for cooking.

Try letting it air out for a week or 2 to see if that helps the smell dissipate. If it does then a hard varnish finish should be fine for dry material like salt.

made yourself from from flake shellac sealer

There is only denatured alcohol and shellac flakes
would this wood sealer under walnut oil be safe for food consumption used on a serving platter/
